PNP1
PNP1 is a gene that codes for a protein called Purine nucleoside phosphorylase. Purine nucleoside phosphorylase is an enzyme involved in purine metabolism, which can cleave a nucleoside by phosphorylating the ribose. Some research suggests that beer is especially bad for gout because it contains higher levels of purines that break down directly into uric acid. Introducing PNP into yeast cells can break down the free nucleotides in beer into purines and improve the utilization of purine. Finally, our beer can reduce the probability of gout.
