Benzalacetone Reductase
Coding sequence for the enzyme benzalacetone reductase. This enzyme reduces 4-hydroxybenzalacetone to 4-(4-Hydroxyphenyl)butan-2-one (raspberry ketone), the primary contributor to raspberry flavor and smell.
No mutations were made to the enzymes genetic sequence. The genetic sequence is optimized for use in Escherichia Coli.
