Modified 0.19 Wheat Albumin sequence (Gly to Glu), an α-Amylase inhibitor

This sequence is a modified version of 0.19 Wheat Albumin (BBa_K2928001) strengthening the dipole bonds to α-amylase. An amino acid substitution was made as follows: the fourth amino acid in the 0.19 polypeptide was changed from Glycine, which has a non-polar side chain, to Glutamic acid, which has a negatively charged hydrophilic sidechain, strengthening the bond to the positively charged Histidine amino acid on the α-amylase.
