GjUGT74F8_opt (UDP-glucosyltransferase)
GjUGT74F8 is a UDP-glucosyltransferase derived from Gardenia jasminoides, which can catalyze crocetin to produce crocin Ⅲ and crocin Ⅴ, and catalyze crocin Ⅳ to produce crocin Ⅱ. In engineering E. coli, the conversion rate of GjUGT74F8 to 50 mg/L crocetin to crocin III and crocin V was 66.1%, and the conversion rate of GjUGT74F8 to 50 mg/L crocetin to 5 crocin was 59.6%. The catalytic activity of microbial UGTs(UDP-glucosyltransferase) is much higher than reported, and it is a highly efficient crocin synthetase. Studies have shown that the transfer of this gene into the Nicotiana benthamiana can play the necessary role in the synthesis of crocin.
