chit42

The endochitinase enzyme encoded by chit42 can be utilized to produce chitooligosaccharide (COS), which is an antioxidant. Endochitinase breaks down the yeasts’ cell wall, in which the chitin abounds and produces COS. COS will serve as versatile functional chemicals possessing antimicrobial and antioxidant activities in beer. Finally, the content of three major staling compounds: 5-Hydroxymethylfurfural (5-HMF), phenylacetaldehyde (PAD), trans-2-nonenal (T2N) will be decreased.
