SOD1

SOD1 gene is a gene widely present in many organisms, which encodes superoxide dismutase 1 enzyme. It is a kind of antioxidant metal enzyme that plays an important role in the balance between oxidation and antioxidant. Oxidative stress occurs when there is an imbalance between the harmful reactive oxygen species (ROS) and antioxidants in the organism. During fermentation, oxidative stress causes damage to the yeast cell components. This can lead to yeast autolysis and purine is released as a result. Moreover, both leaking of the undesirable compounds during yeast autolysis and the oxidation reaction of the molecules in beer that are involved in beer flavoring can affect the flavor stability. SOD1 removes ROS by converting the harmful ROS to molecular oxygen and hydrogen peroxide. We use SOD1 in our project to improve the beer's antioxidant capability.
