G. algens dextranase CDS
CDS of a family 66 dextranase from the psychrophile organism Gelidibacter algens, codon optimized for Escherichia coli.
EDIT 2021-10-18 : We expressed this dextranase at 18 °C for 18 hours with 1 mM IPTG, and we were able to purify it using IMAC chromatography. Using micro Nelson-Somogyi assays, we determined that optimal pH is at 6.5 and the optimal temperature at 40 °C. Since the enzyme is more stable at temperature under 20 °C, we did our assays at 18 °C which was sufficient later on to prove it reduced the viscosity of ropy maple syrup by degrading dextran.
