enoyl CoA hydratase (ech) gene
The sequence of enoyl CoA hydratase (ech) was derived from the Pseudomonas fluorescens genome. The sequence was submitted to GeneArt for synthesis including codon optimisation (Pseudomonas has a very high GC content whereas E. coli and Lactobacillus have much lower GC content).
Ech converts feruloyl CoA to vanillin (fig. 3) and catalyses the final stage of the vanillin biosynthesis pathway.
Involved in the synthesis of 'natural' vanilla flavouring.
