Vitis vinifera Stilbene Synthase Mutant (VvSTS T50I/V170A)
The Vitis vinifera stilbene synthase (VvSTS) is an enzyme that catalyses the formation of a linear tetraketide intermediate from one 4-coumaroyl-CoA and three malonyl-CoA molecules, followed by cyclisation, decarboxylation, and dehydration reactions to form resveratrol.
STS is a key enzyme used for the production of resveratrol and pterostilbene. This version of the enzyme is a mutant with amino acid changes T50I and V170A. These mutations have been shown to increase catalytic efficiency from 3.29 (wild-type) to 4.29 μmol/h/g (Yan et al., 2021).
